The Pollinator

  • 2 Tablespoons Honey Simple Syrup

    Juice of 1/2 lemon

    Sparkling water or Ginger Ale

  • Honey Simple Syrup

    Place equal parts Honey and water in a small saucepan and heat gently over medium until the honey is dissolved. Add a sprig of fresh rosemary or thyme and allow to cool.

    This is really good so make a big batch!

    Assemble your Drink

    In your favorite glass, add ice and all the other ingredients, stir and enjoy.

    Garnish with Lemon slices and herbs.

    Feel free to experiment substituting your favorite adult beverage for half of the ginger ale.

Apple Essence

  • 5 lbs apples

    Any mixture of sweet & tart apples will work, but the more local the more better!

    Great choices include Macoun, Red & Golden Delicious, Honeycrisp, Arkansas Black, Empire and York

    10 cups apple cider

    1 teaspoon ground cinnamon

    1 teaspoon ground allspice (optional)

    1 teaspoon vanilla extract

  • Cut apples into chunks. No need to remove seeds or peel. Also, cooking with the peel increases the natural pectin which helps the apple butter set up.

    Place cut apples in a heavy, large pot with 2 cups apple cider. Cover and cook over medium high heat for 30 minutes or until apples are soft and break down.

    Grind apples in a hand food mill to make applesauce. Discard skins and seeds.

    Return applesauce to the same large pot.

    Add remaining 8 cups of cider and 1 teaspoon of ground cinnamon and allspice (if using).

    Cook at a low simmer over medium low heat, uncovered, stirring frequently until reduced to 2-4 cups in about 2-3 hours.

    Stir more frequently once the mixture is reduced by half.

    When finished, your apple butter should be thick, glossy, and dark golden brown. It will thicken even more as it cools.

    Stir in 1 teaspoon of vanilla extract. Allow to cool and store in a tightly sealed container in the refrigerator for up to 10 days.

Honeybee’s Salad Dressing

(Did you know that in Greek, Melissa means Honeybee?)

  • 1 Tablespoon Local Honey

    2 Tablespoons Balsamic Vinegar

    3 Tablespoons Organic Extra Virgin Olive Oil

  • This is a family favorite salad dressing that is so simple and so delicious. Break out the good stuff and your salad will really shine.

    Whisk together all ingredients and season with salt and pepper until it tastes just right.

    Toss with you favorite greens and enjoy!

Grilled Peaches with Honey

  • 2-4 Organic Peaches Halved (Substitute Nectarines or Plums)

    2 Tablespoons Local Honey

    2 Tablespoons Mint Leaves, Thinly Sliced

    Vanilla Ice Cream (Optional but Highly Recommended)

  • Preheat grill to Medium High Heat (You may also use a grill pan)

    Grill peach halves, cut side down for approximately 5 minutes until nice grill marks form and the surface is warm

    Remove fruit from the grill and drizzle with honey

    Serve in a bowl with ice cream and garnish with mint
